Tasmania is known for its rugged landscapes and stunning outlooks, but it is also renowned for its incredible food scene.

From creamy cheeses to fresh berries and sweet honey, perhaps one of Tasmania’s most iconic offerings is Atlantic salmon – which is not only delicious but also extremely good for you, being rich in Omega-3, Protein, Vitamin B, Vitamin D and a host of other minerals, including potassium and selenium.

With its mouth-watering goodness, it’s no wonder our chefs were drawn to this delicious ingredient – so much so, it features prominently in Domino’s new Super Premium Range!

So, just how does Hot Smoked Salmon come to be on your new favourite Domino’s Super Premium Pizza? Let’s dive in and find out!

Domino’s supplier, Tassal, is Australia’s largest producer of Tasmanian-grown Atlantic salmon and has been mastering this trade in Tasmania’s cool waters for more than 35 years.

While Tassal produced an incredible 34,395 tonnes of Atlantic salmon in 2020, their farms only take up a tiny 0.01% of Tasmania’s ocean – just a pin prick on the map!

As an island with cool ocean waters and winds, Tasmania has the perfect conditions for farming Atlantic salmon.

The secret ingredient for flippin’ good smoked salmon? Tassal’s 1,100+ staff who are based at salmon farms right across the state, working hard every day to produce the Hot Smoked Salmon that makes your Domino’s pizza just a little bit fancy!

The hot smoking process of the Atlantic salmon takes around three to four days from the time the fish is harvested straight from the waters of Tassal’s farms, which are found along the south-eastern coastline of Tasmania. The process begins with the salmon fillets being covered by a small layer of salt, before being placed into curing chillers overnight for moisture release and surface penetration.

With Tassal’s Atlantic salmon boasting a naturally amazing flavour, the goal of the smoking process is to compliment the salmon’s original taste.

Following the curing process, Tassal smoke the salmon with beechwood, aiming to have a light to medium smoky flavour, with subtle woody notes. Combined with the Smoked Salmon, Parmesan & Rocket pizza’s locally farmed parmesan, and fresh, peppery rocket, Tassal’s Hot Smoked Salmon is the perfect protein for this mouth-watering pizza!

While the taste of Tassal’s fresh Hot Smoked Salmon is second to none, there is so much more that goes into producing this delicious ingredient, with Tassal placing a huge emphasis on research and development to ensure they contribute positively to both the environment and the global seafood economy.
